The procedure for using a belt sander is similar to any other sharpening.  Most knives, you can start with the 600 grit and move your way up to the 1,000 grit before finishing with the stropping belt and polishing compound.  With this type of sharpening, you always move the belt away from the cutting edge instead of cutting into the motion of the belt.  The sharpener puts a convex edge on the knife which takes off less metal than traditional sharpening and holds its edge longer.  The convex edge has become the most popular sharpening technique used by custom knife makers.
